and stabilizer in the preparation of Juices, Soups (powder and liquid), Condiments, mustards, ketchup, etc.
In bakery products and confectionery, it is used as a conditioner masses, gives softness, improves the texture and retains moisture from the products, prolonging its shelf life.
In Icecreams acts as a stabilizer efficient preventing the formation of ice crystals and gel in the preparation of desserts and jellies.
In meat products prevents crystallization and syneresis, works as an agent for water retention, is thermostable, resists freezing and thawing, soluble in cold, does not alter flavors giving excellent palatability.
It is compatible with other gums, with which it has a synergistic action. (LBG Algarrobo gum, Guar gum, Xanthan Gum, etc.).

Extract
Tara powder is obtained from the de seeded pods of Tara (Caesalpina spinosa).
There are two types of tara powder: a course-grained powder (2mm), obtained after threshing the tara pods in a mill; and micronized tara powder obtained after grinding the pods into a fine powder.
Description
Tara Powder is a natural source of Tannins extracted from the Tara Pods (Caesalpinea Tinctoria) .The tannin of the Caesalpinia Tinctoria has a pyrogallic character but small quantities of catechol derivatives also occur in it.
The Tara tannin contains practically no coloring substances, and it therefore gives a very bright, light-resistant leather. In addition, Tara Powder imparts fullness and softness to the leather and a fine, closed grain which in the breaking elongation test resists a higher load than leathers which are tanned with other vegetable tannins.
Also, Tara Powder is used in tanning and manufacturing of plastic, adhesives galvanize and Galvan plastics, Wine clarifying (in order to improve the quality of beer), pharmaceutical industry( for their therapeutic qualities), metals protection, cosmetic area, oil-bearing drilling. etc.
Special Warnings
Tara Powder has sub-chronic toxicity. Toxic by inhalation. The lasting contact causes eyes and skin chafing. Keep out of reach of children and pet animals. Do not store together with medicine or food.
Uses
Tara powder is mainly used to tan leather, a process that makes the leather very soft to the touch. It is very profitably used in preparing the leather of reptiles, Moroccan leatherwork, special finishes such as velvet, napped and in the production of leather upholstery. It is also used in the manufacture of plastics and adhesives, storage of fishing gear, because of its anti-bacterial and fungicidal properties, and in the food industry to distill wine and remove corrosion from boilers.
